Associate Catering Sales

Antonio recently joined the Windrose team and brings with him over 21 years of experience in banquet and catering management. He believes the goal of hospitality is not simply hosting an event, but creating a memorable experience for your guests in the process. Outside of work, he spends as much time as he can with his wife and two young daughters.

With more than 35 years of hospitality experience at a variety of properties, Simon joined the team at Windrose this year and hit the ground running. He feels that no two customer experiences are the same and that personalization and customization can make a world of difference for leisure guests and event planners. She prides herself on working as a team with all departments, so everything comes together for the client. Shalon enjoys cooking, baking, and traveling with her family and is always amazed by her children.

IT Manager

With a passion for solving daily challenges and ensuring seamless tech experiences for our guests and event teams, Oscar brings dedication and heart to everything he does. Paisa Platter lover, when he’s not ensuring everything runs smoothly behind the scenes, Oscar is either dancing to salsa, playing soccer, or rising at 3:45 AM to hit the gym.

General Manager

For Luis, Windrose’s 62 acres feel like home—fitting for someone who grew up on a farm and drove a tractor at age seven. Now living his dream as General Manager, he thrives on teamwork, shared goals, and the joy of building something great with people he respects and admires.

Paul Cozza-Rodas
Pastry Chef

Paul has been working approximately 20 years in the industry in the pastry field. He's always keeping a “third eye” on the world food trends happening and try to adapt his own take on them. As an avid gym-goer, his goals are to continuously gain the strength and agility in order to endure the physicality of being a chef such as taking 50lb bags of sugar and flour.

Executive Chef Thomas Borowitz brings over 15 years of culinary experience to Windrose, with a journey that began in high school kitchens and led to top roles at Dolce and Trump International. Inspired by family and fueled by innovation, he now leads with passion—serving creative cuisine and standout mocktails.

Javier Santos
Director of Operations

Javier has almost 20 years of experience in the sector and thrives in an environment where he can build long lasting relationships with clients and coworkers. He studied engineering and brings his inventive and analytical skills to Windrose operations, helping to design and implement systems that make meeting and event planning a success. Javier loves few things in life as much as his children, soccer and Columbian food.

Front Office Manager

Marco brings over 20 years of hospitality experience and a warm, welcoming spirit to Windrose on Hudson. A Croton resident for the past two decades, he lives with his wife and their three daughters—and swears by her curry chicken and Spanish rice. He started his career in Manhattan and now enjoys the perfect blend of city energy and small-town charm in Westchester. Outside of work, you’ll find him outdoors or spending time with family. Marco joined the team in September 2024 and is proud to be part of such a gracious, community-focused property.
